This is such a quick and easy salad to make, and 9 times out of 10, I’ve already got the ingredients in my kitchen.

I N G R E D I E N T S

2 large cucumbers, halved lengthwise, seeded and sliced
1/3-cup red wine vinegar
1 tablespoon Stevia
1 teaspoon salt
3 large tomatoes, seeded and coarsely chopped
2/3-cup coarsely chopped red onion
1/2-cup chopped fresh basil leaf or flat parsley
3 tablespoons extra virgin olive oil
salt and pepper to taste 

P R E P A R A T I O N

Combine all ingredients in a large bowl. Toss well to mix. Refrigerate at least 2 hours before serving. [Tip: Add avocado or feta cheese!] 

Total Time: 15 min. (Prep: 10 min. Mixing: 5 min.)

Yield: 4 servings
